Marinating
The Chinese often use a classic, wonderfully aromatic marinade of soy sauce, fresh ginger, garlic and cornflour. This marinade tenderises tough meats and protects delicate foods during stir-frying.

An Indian meal
For a typical evening meal in India, a selection of dishes are usually served. In Northern India this would typically be daal, a vegetable dish and a meat dish, eaten with chapattis or occasionally naan bread.

Cooking Tip
Adjusting saltiness
To tone down a dish that's too salty, add lime juice or lemon juice. For a dish that's not salty enough, add fish sauce instead of salt - or soy sauce if you're vegetarian. This will give the dish more flavour as well.
